Gas grill recipe 1 – Curried chicken breasts
Ingredients:
2 chicken breasts cut in half
½ cup melted butter
Lemon juice
Medium curry powder
White pepper
Salt
Method:
Grill the chicken breasts with the skin on over a low heat for around 15 minutes, turning regularly to ensure each side is cooked evenly. Dissolve 4 teaspoons of salt into a cup of warm water and use this salted water to baste the chicken as it cooks for a further 25 minutes. Mix ½ cup of melted butter with 2 teaspoons of lemon juice, 1 teaspoon of curry powder, and a good pinch of white pepper and now use this mixture instead of the salted water to baste the chicken as it cooks for a further 15 minutes on a medium heat. Remember to keep turning the chicken over to ensure it is evenly cooked and baste each time just before you turn.
